Although for some people the idea of pairing cheeses and Japanese sakes may seem inconceivable and impossible, just one taste will completely change their minds. Japanese sake – which is not "rice alcohol", unlike what most French people think – is a "rice wine", the result of a fermentation process, just like cheese. First and foremost, it is a flavour enhancer that sets cheeses off nicely, heightening their intrinsic flavours. An original way of changing people's habits and enjoying cheese in a different way.
